Ingredients:

  • 3 large sweet potatoes, peeled and cubed (3-4 cups)
  • 2 red onions, sliced thinly into half moons
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled or cubed feta
  • 1/4 cups chopped herbs (parsley, sage, or cilantro)
  • Olive Oil
  • Salt and Pepper

Ingredients for the dressing

  • 2 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp honey or maple syrup
  • 1/2 tsp ground cumin
  • 1/4 tsp ground paprika
  • 1/4 c olive oil

Directions:

  1. Preheat oven to 400F
  2. Peel, chop and cube sweet potatoes and slice onions.
  3. Add sweet potatoes and onions to the pan and toss with olive oil, salt and pepper.
  4. Bake until tender with fork, about 20-30 minutes, let cool on the pan and then transfer to a large bowl.
  5. Make dressing; add all ingredients to a jar with a lid, then shake up until well mixed.
  6. Add cranberries, feta and chosen herbs (I used sage here) to the bowl of sweet potatoes, cover with dressing and mix up.
  7. Serve warm (my favourite) or cool.
