Ingredients:

  • 4-6 cups rough chopped Kale
  • Goat’s Cheese (1 package approx 150g)
  • 1 Red Onion diced or sliced
  • 3-4 Beets, peeled, diced, roasted
  • 1/3 cup Walnuts chopped
  • Lemon juice (1/2 lemon)

Dressing:

  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Olive Oil
  • 1.5 tbsp Maple Syrup
  • 1 tsp Mustard
  • S + P to taste

Directions:

  1. Peel and cube 3-4 beets into 3/4″ – 1″ cubes
  2. Place beets on a baking sheet, toss with oil, salt and pepper and roast for 1 hr at 375 F or until cooked but still al dente.
  3. While beets are cooking, chop, wash and dry kale, add to a bowl, massage with juice from 1/2 lemon until soft
  4. Make dressing: add all ingredients to small mason jar and shake up. Add more maple syrup for a sweeter dressing.
  5. Once beets are cooked and cool, add; beets, diced onions, chopped walnuts, crumbled goats cheese, then drizzle with balsamic dressing.
  6. Mix and enjoy!
